Hook's Colby
World Champion Colby 1982
American Cheese Society Winner Label

Hook's World Champion Colby is a washed curd cheese.  This is the traditional way of making Colby and gives the cheese little tiny openings and a sweeter flavor than a cheddar.  Washing the curd washes the lactose or milk sugar off of the curd.  In traditional cheddar the lactose is not washed off and the starter bacteria that we add feed on the milk sugars changing the cheese to give it a more acidic flavor.  This does not occur in our traditional Colby still made the same way we made it when we won the overall World Cheese Championship on it in 1982.   Our Colby also took 3rd place at the American Cheese Society Competition 2010.

A mild white cheese often used in Hispanic style dishes.

Hook's Maple Jack

 A mild white cheese with Maple Syrup.

Hook's Muenster

A mild white cheese, slightly more moist than a Brick or a Monterey Jack.

A mild white cheese like Monterey Jack originally made in the shape of a brick.

Hook's One Year Sharp Cheddar

A colored cheddar that has a nice flavor, a little sharper than our medium cheddar. This is what most stores would call a sharp cheddar.

A white cheddar that is a little sharper than our one year cheddar.

Hook's Three Year Sharp Cheddar

A colored cheddar that is starting to show the nice acidic sharpness with a good cheddar flavor.

An extra sharp cheddar with a nice, full flavor.

Hook's Six Year Sharp Cheddar

An extra sharp white cheddar with a nice full cheddar flavor.

Hook's Seven Year Sharp Cheddar

An extra sharp cheddar with some calcium (calcium lactate) crystals that add a little crunch. This cheddar has a lot of flavor and is a little smoother than the Five Year.

An extra sharp white cheddar with a lot of flavor.

Our 10 year cheddar won 1st place at the 2006 American Cheese Society Show, the only 10 year cheddar to get a 1st place in this, or any competition. It has more calcium crystals than our 7 year cheddar. It has a full, rich cheddar flavor and a smooth finish.

Hook's Twelve Year Sharp Cheddar

Our 12 year colored cheddar has a lot of calcium crystals and a great, rich cheddar flavor.

Hook's Sweet Constantine

Made similar to a parmesan, this Hook's original tastes like a cross between parmesan and asiago. It has a sweeter flavor than a parmesan and can be grated on salads, pastas, pizzas, or in soups.

Hook's Tomato-Basil Cheddar

Sun dried tomatoes and fresh basil add a lot of flavor to a mild cheddar.

Hook's Truffle Cheddar

White Cheddar with Black Truffle powder and oil added.  Great to melt on pasta or eggs, or to eat with crackers.

Hook's Red Errigal

A mixed milk cheese made from cow and sheep milk. Made in the style of a Colby.

Hook’s Triple Play

A fantastic blend of three types of milk – cow, sheep, and goat.  Flavor notes that come through – Baby Swiss, Havarti and Gouda.

Hook's Blue

Our original Blue we have been making for over 11 years. It is a Danish style blue aged over 1 year with a strong, tangy blue flavor and a somewhat sweet finish.

Hook's Blue Paradise

American Cheese Society Winner Label

Our Blue Paradise won 2nd place at the 2012 American Cheese Society Competition.  A double cream blue. It is a smooth, creamy, milder flavored blue cheese.

Our Little Boy Blue won 1st place at the American Cheese Society Competition, 2011, and 2014 as well as, 2nd place at the 2012 American Cheese Society Competition, 3rd place in both the American Cheese Society Competition and the World Cheese Championship 2010.  Also received a 1st place in its category at the US Championship 2011 and 2013. Little Boy Blue is a blue cheese made from SHEEP milk instead of cows milk just like true Roquefort is made from sheep milk in France.  We make ours at our plant in Mineral Point from sheep milk produced in Southwest Wisconsin - some on Amish farms in the area.  The cheese is produced during the time period of the year when the sheep are out grazing on lush grasses growing on the rolling hills of Southwest Wisconsin. Hook's Gorgonzola

Our Gorgonzola won 2nd place in the World Cheese Championship and 3rd Place at the American Cheese Society Competition 2010, as well as, earning a 3rd at the US Championship in 2013.  A stronger, tangy blue veined cheese aged about a year, with an acidic aftertaste.
